  • 6 lemons
  • 1 stick of butter, softened
  • 2 C. granulated sugar
  • 4 eggs
  • ½ tsp. honey
  • 1 package (Large 6-serving) Jell-O packet
  • 2 C. boiling water
  • 6 oz. frozen orange juice concentrate

Grate zest from lemons to equal approximately 2 Tbs. Cut all lemons in half. Squeeze juice into a small bowl or measuring cup equaling about 1 cup. Using a hand mixer or counter top mixer, beat butter and sugar until softened. Reduce speed to low. Gradually add one egg and a time, mixing well after each one. Pour mixture into a microwave-safe bowl.

Microwave on high for 5 minutes, stirring once after each minute. Microwave for an additional 1-2 minutes, stirring after each 30 seconds. Chill for 1/2 hour.

In a small saucepan heat boiling water. Pour in package of Jell-O and stir until dissolved. Add frozen orange juice concentrate and mix. Set aside.

Add pudding evenly into small bowls. Pour Jell-O concentrate on top so it fills almost to the top of the dish or bowl. Refrigerate for 4 hours or until set and serve.
