  • 2/3 C. arborio rice, rinsed
  • 8 C. water
  • 1/8 tsp. salt
  • 4 C. fat free milk
  • 3 Tbs. light brown sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. grated orange zest
  • 1/4 tsp. ground cinnamon

Place rice in a 5 qt. saucepan with water and salt. Bring to a boil over high heat. Reduce heat and boil for 7 min. Drain rice and return to pot. Stir milk and sugars into rice, stirring until sugar dissolves. Bring to a boil over medium-high heat. Reduce to medium-low and simmer for 20 to 25 min while stirring frequently. Pour into a bowl, stir in vanilla, orange zest and cinnamon. Cover surface of pudding with plastic wrap and let it cool before serving.
