  • 4 lb. chicken wings or drumsticks, prepared
  • 6 cloves garlic, minced
  • 2 tsp. coriander seeds
  • 1 T. white peppercorns
  • 2 T. cilantro
  • 3 T. oyster sauce
  • 1 tsp. sugar
  • Salt and pepper to taste
  • 1 ½ C. rice flour
  • 2 tsp. baking soda
  • 1 C. water
  • 1 C. all-purpose flour

In a food processor, combine garlic, coriander seeds, white peppercorns, and cilantro until a paste forms. Rub onto chicken and place in a bowl. Toss with oyster sauce, sugar, salt, and pepper. Cover and refrigerate overnight. In a bowl, whisk together rice flour, baking soda, water, and a dash of salt. Take chicken, dip into batter, coat with all-purpose flour, and place on a baking sheet lined with parchment paper to set up for several minutes. In a deep fryer or large skillet, heat oil to 350 degrees and add in chicken. Cook through and transfer to a plate with paper towels to drain and cool.
