Tangy Veggie Salad

Ingredients
- 3 large cucumbers
- 3 large Jersey tomatoes
- 1 lb. fresh string beans
- 2 tsp. dijon mustard
- 1/8 C. extra virgin olive oil
- 1/4 C. white wine vinegar
- 1/4 C. chopped onion
- 1/4 C. chopped carrots
- 1/4 C. red, yellow and green pepper
- 1 Tbs. minced garlic
- Salt and pepper to taste.
Directions
Cook fresh string beans in the microwave. Peel and cut cucumbers into slices. Cut tomatoes into chunks. Shred carrots, onions and all peppers. Mix all ingredients together and refrigerate for 1 hour before serving.
