  • 2 Tbs. plus 2 tsp. olive oil
  • 2 garlic cloves, grated
  • 1 C crushed tomatoes
  • 1 tsp. sugar
  • 4 oz. goat cheese, cut into ¼ slices
  • 1/2 baguette, cut into ¼ inch to ½ inch slices
  • Oregano, to taste

Preheat oven to 350 degrees.

Place baguette slices on baking sheet and drizzle with two tablespoons olive oil. Season with salt and pepper.

Bake until golden brown and crisp, about 10 to 15 minutes.

In a pan, heat 2 teaspoons oil and garlic. Cook until softened, about one minute. Add tomatoes and simmer for 5 minutes.

Place goat cheese and tomato mixture on top of baguette slices. Turn oven to broil. Broil until the cheese is golden brown, about five minutes.

Season with oregano and serve warm.
