  • 1 18.25 oz. package Lemon Cake Mix
  • 2 Eggs
  • 1/3 C. Canola Oil
  • 3 Tbs. Lemon Juice
  • 1/3 C. Confectioners' Sugar

Preheat oven to 375 degrees. Line a large baking sheet with parchment paper. In a large bowl, combine the cake mix, eggs, canola oil, and lemon juice, and stir until well-mixed. Pour the confectioners' sugar into a small bowl. Scoop up the dough by heaping tablespoonfuls and roll each scoop into a ball. Roll the dough balls in the powdered sugar to lightly coat. Evenly space the cookies across the prepared baking dish. Bake for about 10 minutes until the bottoms of the cookies are golden-brown.
