  • For the cookie dough:
  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 1 tbsp. lemon zest
  • 1 tbsp. fresh lemon juice
  • 2 1/2 cups all purpose flour
  • 1/2 tsp. salt
  • For the lemon curd:
  • 1 lemon
  • 1/2 cup sugar
  • 1/2 cup unsalted butter
  • 1 extra large egg
  • 1/2 cup fresh lemon juice
  • 1/8 salt

Preheat oven to 350 degrees. Line two baking trays with parchment paper.
In a large bowl, beat butter and sugar together until smooth. Mix in yolks, lemon juice, zest, and salt. Add in flour and mix until the mixture begins to hold together. Pat the dough together and allow it to bind for 5 minutes. Roll out 1 inch balls of cookie dough and spread them on the trays 1 inch apart from each other. Use a floured finger to indent a deep hole in the center of each cookie. Bake the cookies for 18-20 minutes until edges are light gold. Take out the cookies and fill the indentations with curd and bake for 2 more minutes. Allow the cookies to cool and dust with powdered sugar.
