You haven't lived until you've had these tart strawberry jam-filled cookies! A buttery sugar cookie meets a tart and sweet sticky preserve, is a match made in heaven.   • 3/4 C. softened butter
  • 1 1/2 C. granulated sugar
  • 2 lg. eggs
  • 1 tsp. vanilla extract
  • 1 1/4 tsp. baking powder
  • 3 C. flour
  • strawberry jam or preserves

Preheat oven to 375ยบ.

Line a baking sheet with parchment paper and set aside. In a bowl combine dry ingredients and mix well. In a large mixing bowl cream butter and sugar together, then beat in vanilla and eggs until well combined. Gradually mix in dry ingredients to butter mixture. Beat until dough is creamy.

Prepare a floured work surface, and place half the dough onto it, using a rolling pin lightly floured flatten the dough. Using a round scalloped cookie cutter cut out as many rounds as the dough will allow. On half of the rounds use a small heart shaped cookie cutter and cut one to two hearts out.

On the other rounds that haven't been cut, place about two to three tablespoons of jam. Place a dough round that has hearts cut out on top of jam covered round and gently press together with a fork around perimeter. Do this for each cookie, and repeat these steps for the other half of the dough in the bowl. Place each prepared sandwich cookie onto lined baking sheet and place in the oven.

Let bake for 6-8 minutes or until dough is browning around the edges. Take out and let cool for 3-5 minutes. Serve
