Ingredients

  • Cupcakes:
  • 1 C. shortening
  • 1¾ C. sugar
  • 2 ¼ C. flour
  • 2 eggs
  • 1 C. buttermilk
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1½ tsp. white vinegar
  • 1 oz. red food color
  • 1 ½ tsp. cocoa powder
  • Frosting:
  • 1½ package of cream cheese
  • ¾ C. butter
  • 1½ lb. powdered sugar
  • ¼ tsp. salt
  • 2 tsp. vanilla
  • Optional:
  • 20 candy canes
  • Green food dye

Directions

Preheat the oven to 350 degrees. Add all of the cupcake ingredients into an electric mixing bowl and let it mix until it is all combined. Pour the batter into a cupcake pan, lined with cupcake liners. Let them bake for 15 minutes. While the cupcakes are baking, make the frosting. Mix together all of the frosting ingredients until it is smooth. Let the cupcakes cool. Spread the frosting on each cupcake. Garnish them with a candy cane and enjoy!
