Tasty Acorn Squash
Ingredients
- 1 acorn squash
- 3 C. herb-seasoned stuffing mix
- 2 C. water
- 1 C. V-8 juice
- 2 oz. butter
Directions
Cut squash in half and remove seeds. Cook in either microwave for 10-12 minutes or regular oven at 350 for 45 minutes. Prepare stuffing by mixing stuffing mix, water and V-8 juice (can use tomato juice to substitute).When cooked, fill both halves of squash with the dressing made from stuffing mix, water, and V-8 juice. Put 1 oz. of butter on each section of squash. Bake in regular oven for an additional 10-12 minutes or until top of dressing is lightly browned.Ā
