Don’t be fooled by these delicate creations! Packed with protein in form of lentils, healthy fats from tahini sauce and vegetables, they are a satisfying meatless snack!

Ingredients

  • 1 C. dry green lentils
  • 1 tsp. curry
  • 1 teaspoon olive oil
  • salt to taste
  • 2 Tbs. tahini paste
  • 3 Tbs. warm water
  • 2 Tbs. fresh lemon juice
  • 1-2 garlic cloves finely minced
  • 1/2 tsp. ground turmeric
  • 1/2 tsp. sea salt
  • 1/2 tsp. pepper
  • 1/4 C. chili peppers
  • 1 1/2 C. shredded cabbage
  • 1/2 C. chopped cilantro
  • 2 Tbs. toasted sunflower seeds
  • 4 x 12 inch tortillas, warmed

To make the tahini sauce, whisk in a small bowl tahini paste, water, olive oil, lemon juice, curry, garlic salt and pepper. Cook lentils in a pot of water until soft. Drain and season with curry, turmeric and salt. When ready to assemble the wraps, simply heat tortillas over a gas stove top or warm them up in microwave. Smear tahini sauce, then add lentils, cilantro, chili peppers and veggies. Serve with a spicy sauce such as Sriracha.
