  • 1 lb. roast beef
  • 1 package onion soup mix
  • 1 C. water
  • 1 C. shredded cheese
  • 1 package corn tortillas

Sear the beef in a skillet, just browning both sides, then add to a crock pot along with the soup mix and water. Cover and cook on low for 8 hours. Once cooked, shred the beef with a fork. Dip the tortillas in oil to soften them, then drain on paper towels. Fill each tortilla with cheese and beef, then roll up. Put the filled tortillas seam-side down on a cookie sheet and bake for 6 minutes at 400 degrees, flip, then bake another 5 minutes.
