  • ½ lb. chuck beef, cooked and cut into bite-sized pieces
  • 6 C. water
  • 4 C. chicken broth
  • 3-4 potatoes, peeled and cubed
  • 2 C. cabbage, shredded
  • 1 onion, diced
  • 1 carrot, grated
  • 2 ½ C. beets, peeled and diced
  • 1 C. tomato juice
  • 1 C. crushed tomatoes
  • 2 T. lemon juice
  • 2 tsp. sugar
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Sour cream for garnish

In a large pot, bring water and broth to a boil. Add in potatoes and cabbage. While cooking, heat butter in a skillet and sauté onions and carrots until fragrant. Add into pot. Going back to your skillet, combine beets, tomato juice, crushed tomatoes, lemon juice, garlic, and sugar; season with salt and pepper. Simmer for 30 minutes making sure that beets are tender. Add your beets and cooked beef into the borscht. Serve with a dollop of sour cream.
