  • 2 lbs red potatoes
  • 1⁄2 cup low-fat milk
  • 1⁄4 cup heavy cream
  • 3 tablespoons butter
  • salt and black pepper
  • 1⁄4 cup garlic (whole cloves)
  • 4 slices bacon, diced and cooked until crispy

Take a sheet of heavy-duty aluminum foil and place a single layer of garlic cloves. Wrap tightly. Preheat oven and allow cloves to roast at 400 degrees F. This takes around 45 minutes. Unwrap and cool. Peel cloves and mash with potatoes when they are ready. In a large pot or saucepan, bring potatoes to a slow boil for about 20 minutes. Remove from heat and drain. In a bowl, combine all ingredients and mash with potato masher.
