  • 1 stick butter, room temperature
  • 1 C. + ¼ C. sugar, divided
  • 2 tsp. vanilla extract, divided
  • 6 eggs (4 egg whites, 6 egg yolks)
  • 2 C. flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 C. buttermilk
  • Dash salt
  • 8 oz. mascarpone
  • ½ C. heavy whipping cream
  • 3 T. amaretto
  • 1/3 C. brewed coffee
  • Cocoa powder for topping

Preheat oven to 350 degrees. In a large bowl, beat butter with a mixer until it becomes fluffy. Add in 1 cup of sugar and beat for another minute until well combined. Add in egg whites, one at a time, then vanilla, and mix well. In a separate bowl, combine flour, baking powder, and baking soda. Add flour mixture into batter, alternating with buttermilk, starting and ending with flour. When batter is smooth, pour into a greased baking pan and bake for 20 minutes until an inserted toothpick comes out clean. In a large bowl, whisk together cream and 1 tablespoon of sugar with an electric mixer until soft peaks appear; set aside. In a clean bowl, whisk together egg yolks and 3 tablespoons of sugar for about 3 minutes until thick and frothy. Mix in mascarpone and amaretto. Turn off mixer and gently fold whipped cream into your mascarpone. Poke holes into your cake and pour coffee evenly over the surface. Spread mascarpone cream on top and dust cake with cocoa powder. Refrigerate and serve cold with melted chocolate drizzled on top.
