Just the mention of a black bean burger can sound a bit off to some people, but they’re actually really good. They’re flavors are just as good and better at some times. This recipe uses quinoa to deliver a taste that is not only unique but also oh so very delicious.

Ingredients

  • 2 cups quinoa, cooked
  • 1 tbsp. extra virgin olive oil
  • 1 large egg
  • 1 cup bread crumbs
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 2 tbsp. garlic powder
  • 1 cup arugula
  • 1 red onion, sliced
  • 2 tomatoes, sliced
  • Wheat buns

Directions

Combine all ingredients (except buns, arugula, onion, and tomatoes) in a large bowl. Stir until thoroughly combined. Begin forming mixture into patties. Place patties in crockpot. Cook for about 3 hours on high, or until patties are cooked through. Serve on wheat buns with arugula, onions, and tomatoes.
