Who knew fried rice could be so simple to prepare? This dish tastes wonderful with soy sauce and a variety of vegetables including scallions, carrots, celery, and peas.

Ingredients

  • 3 C. cooked brown rice
  • 1/2 C. margarine
  • 1/2 C. thinly sliced scallions
  • 2 stalks celery
  • 2 carrots, diced
  • 1 C. frozen peas
  • 1-3 eggs, beaten
  • 1/4 C. soy sauce
  • freshly ground black pepper

Use a large nonstick skillet to melt the margarine. When ready, add the scallions, celery and carrots to the skillet. Saute for around 5 minutes, which is about how long it should take for the onions to be transparent and the carrots are tender. Add the peas and cook for 1 additional minute. Move the cooked vegetables to 1 side of the skillet. Scramble the eggs on the other side. Once scrambled, mix together the eggs and vegetables. Season with pepper to your preference. Add soy sauce into the skillet and carefully mix in the rice until all of the ingredients are thoroughly combined. Fry until hot while stirring regularly and then serve.
