  • 3 T. butter
  • 1 C. sifted flour
  • 1 C. cornmeal
  • 1 C. milk
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 egg, beaten
  • Extra:
  • Maple syrup

Preheat the oven to 400 degrees. Place ¼ tsp. into each muffin tin, you should have enough for 12. In a bowl, mix in the dry ingredients. In another bowl, mix together the remaining ingredients. Combine both mixtures. Let the mixture sit for 5 minutes. Meanwhile, place the muffin tin into the oven for 1 minute, to get the butter melted. Remove from oven and fill each tin with the batter. Bake for 20 minutes. Remove from oven. Let them cool. Spread a thin layer of maple syrup over the top. Serve and enjoy.
