  • 1 ½ C. rice
  • ¼ C. parmesan cheese
  • ½ C. white wine
  • 4 C. vegetable stock
  • 1 bunch of asparagus, sliced
  • 2 shallots, sliced
  • 2 garlic cloves, minced
  • 2 T. olive oil
  • Salt
  • Pepper

Simmer the vegetable stock over medium heat in a saucepan. In a separate saucepan, heat the olive oil. Add in the prepared shallots and garlic to sauté them. Once sautéed, add in the rice. Pour in the wine and let the rice absorb it. Start to add in the vegetable stock, 1 ladle at a time. Add in the asparagus. Sprinkle in the Parmesan cheese. Add salt and pepper to taste. Serve and enjoy!
