  • 2 lbs yellow potatoes, peeled and diced
  • ¾ cup whole milk
  • 1¼ teaspoons salt
  • 1 egg
  • 1/3 cup flour
  • ¼ teaspoon pepper
  • 3 tablespoons butter

Preheat the oven to 200°F. Put half of the potatoes in a saucepan and cover with cold water. Salt generously and cover, bringing to a boil. Reduce the heat to a simmer, uncover and cook for 8 minutes, or until tender. Grate the remainder of the potatoes and salt with ¼ teaspoon salt. Place in a strainer over a large bowl and set aside. When the potatoes are done boiling, drain and return to pan, mixing with ¼ cup of milk and mashing until smooth. Squeeze the potatoes in the strainer to remove any excess liquid. Pour these potatoes into the saucepan with the mashed potatoes. Place the remainder of the milk, salt, egg, pepper, and flour into a large bowl and whisk together until smooth. Add to the potatoes to the bowl and stir until well mixed. Heat a large pan with non-stick spray. Add butter to coat the bottom and then drop ¼ cup of batter into the pan. Cook for 4-5 minutes, or until golden brown and then flip and repeat. Place on a baking sheet and place into the oven to keep warm until the rest of the batter is finished.
