  • 4 flour tortillas (large enough to wrap)
  • 15 oz. can garbanzo beans, drained
  • 1 C. cooked quinoa
  • 1 C. cucumber, diced
  • 1 C. fresh spinach
  • ¼ C. red onion, chopped
  • 1 Tbs. cilantro
  • ½ lime, juiced
  • Salt and pepper

Saute the spinach. Combine all of the ingredients, except the tortillas, in a bowl. Pour a good amount of the salad into each of the tortillas and wrap them.
