Ingredients

  • Slaw:
  • 1 1/2 red cabbage head, chopped
  • 1/4 C. shredded carrots
  • 1 red onion, thinly sliced
  • 1/2 C. golden raisins
  • 1/2 C. dried apricots
  • Vinaigrette:
  • 2 Tbs. soy sauce
  • 1 Tbs. rice vinegar
  • 1 Tbs. olive oil
  • 1 Tbs. sesame oil
  • 2 tsp. honey
  • 1 tsp. ginger, grated
  • 1 Tbs. lemon juice

Directions

Place all of the slaw ingredients in a large bowl. In a small, separate bowl mix together all of the vinaigrette components. Coat the slaw with the dressing. Refrigerate for at least 1 hour.
