  • 7-oz cooked shrimp
  • ground black pepper
  • 1 C. yellow cornmeal
  • ¾ C. self-rising flour
  • 1 tsp. salt
  • ½ tsp. cayenne pepper
  • ½ tsp. paprika
  • 1 C. milk
  • 1 egg
  • 1 sm. Vidalia onion, minced
  • 3 celery stalks, minced
  • ¼ C. chives, minced
  • cooking oil

Take cooked shrimp and cut into small pices. Season with salt and pepper; set aside.

In a medium bowl whisk together cornmeal, flour, salt, cayenne pepper, paprika. After combined stir in milk and egg. Mix in onion, celery, chives and shrimp with a wooden spoon. The batter should be thick.

In a pot preheat cooking oil to 350ºF.

Use a mini cookie scoop to scoop out the batter. Place batter scoop onto a spoon and lower into the oil. Cook for 3-5 minutes or until the hushpuppy is golden brown. Place on a paper towel lined plate to absorb excess oil. Serve.
