  • 4 C. cooked white rice
  • 1 T. olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, finely diced
  • 1 T. vegetable bouillon
  • 1 tsp. turmeric
  • 1 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1 can diced tomatoes
  • 1 (15 oz.) can pinto beans

Use a large skillet to heat the olive oil. Add the onion and peppers into the skillet and saute for around 20 minutes, which is about how long it should take for onion to appear translucent. Add the garlic and cook for 10 additional minutes. When finished, add the tomatoes, vegetable bouillon, turmeric, salt, and black pepper. Add the beans and rice, heat through, and serve when ready.
