This is my favorite sweet potato casserole for the holidays.

Ingredients

  • 1 lg. can sweet potatoes, drained
  • 1/2 C. brown sugar
  • 1 lg. can crushed pineapple, drained
  • 1/2 C. white sugar
  • 1 Tbs. butter
  • 1/2 tsp. salt
  • marshmallows, optional

Directions

Smash sweet potatoes Stir in crushed pineapple, sugar and salt. Put in a 2-qt. greased casserole dish. Put pats of butter on top and bake at 350 degrees for 45 minutes. Marshmallows may be melted on top.
