This is one of my favorite vegetarian dishes, because it's so filling and healthy. Personally, I like to make some falafel and hummus to go alongside this dish, but it definitely stands on its own!

  • 2 C. fine bulgur
  • 2 C. water, boiling
  • 1 C. scallions, finely sliced
  • 1 onion, finely chopped
  • 1/2 C. parsley, finely chopped
  • 2 C. cherry tomatoes, quartered
  • 1/4 C. olive oil
  • 1/4 C. red wine vinegar
  • 2 lemons, juiced and zested
  • 1 Tbs. soy sauce
  • dash cayenne pepper

In a large bowl, cover the bulgur with boiling water and allow to stand for 5 minutes. Fluff grains with a fork after they've absorbed the water. 

Add the onions, parsley, and tomatoes. Mix. 

Add the remaining ingredients one at a time as you mix. Chill in the fridge and toss lightly before serving.
