Tasty Tabouleh Salad
Serving Size / Yield
- 2 C. fine bulgur
- 2 C. water, boiling
- 1 C. scallions, finely sliced
- 1 onion, finely chopped
- 1/2 C. parsley, finely chopped
- 2 C. cherry tomatoes, quartered
- 1/4 C. olive oil
- 1/4 C. red wine vinegar
- 2 lemons, juiced and zested
- 1 Tbs. soy sauce
- dash cayenne pepper
In a large bowl, cover the bulgur with boiling water and allow to stand for 5 minutes. Fluff grains with a fork after they've absorbed the water.
Add the onions, parsley, and tomatoes. Mix.
Add the remaining ingredients one at a time as you mix. Chill in the fridge and toss lightly before serving.
