  • 2 lb. beef tenderloin
  • Salt and pepper to taste
  • 1 egg
  • 1 T. water
  • 1 T. butter
  • 2 C. mushrooms, finely chopped
  • 1 onion, diced
  • 2 T. all-purpose flour
  • 1 sheet puff pastry, thawed

Preheat oven to 425 degrees. Season beef tenderloin with salt and pepper, place in a roasting pan, and roast for 30 minutes. Cover tenderloin and refrigerate for 1 hour to set up. In a large skillet, melt butter and sauté mushrooms and onion until tender. Roll out puff pastry on a flour surface, brush with whisked egg and water mixture, and spoon on mushroom and onion mixture. Add beef to the center, roll up pastry, and seal. Brush egg mixture over the entire pastry, place on a baking pan, and bake for 25 minutes until golden brown.
