This unique twist on pasta salad is bold and easy to make. It mixes elements of Italian and Mexican cuisine which is sure to be a hit this Labor Day!

Ingredients

  • Pasta:
  • 1 12 oz. package of Rotini pasta
  • 1 ½ C. roasted corn, loose
  • 1 ½ C. black beans, canned
  • 1 pint of grape tomatoes
  • ⅓ C. cilantro, chopped
  • ½ C, green onion
  • 2 cloves of garlic, minced
  • Dressing:
  • ½ lime, juiced
  • ¼ tsp. cumin
  • ½ tsp. salt
  • ¼ C. ketchup
  • ½ C. red wine vinegar
  • ½ C. vegetable oil
  • ¼ C. white sugar
  • 1 tsp. paprika
  • ½ tsp. onion powder
  • ½ tsp. Oregano
  • ⅛ tsp. Worchestire sauce
  • Salt and pepper to taste

Directions

Cook pasta using the directions on the package. While the pasta is cooking, start making the dressing. Blend all of the dressing ingredients together and chill. Rinse and drain the pasta. Cut the tomatoes in half and add them to the rotini along with the beans, corn, and cilantro. Toss the salad with the dressing, top with more fresh lime juice (optional) and enjoy.
