Ingredients

  • 1 lb. roast beef, sliced
  • 1 pkg. mini heirloom tomatoes, halved
  • 1 lb. mozzarella, sliced
  • 2 cups basil leaves
  • ½ cup parmesan cheese, grated
  • ½ cup extra virgin olive oil
  • ½ cup pine nuts
  • 1 roll French bread
  • 1/3 cup margarine, melted

Directions

Combine basil, parmesan cheese, and pine nuts in a food processor
Preheat oven to 350 degrees
Begin processing ingredients while slowly adding olive oil to make pesto sauce
Set pesto aside
Slice bread and spread butter on one side
Place mozzarella cheese on bread, over butter side
Put bread on baking sheet and place in oven
Cook for about 5 minutes or until cheese has melted
Remove toasted bread from oven
Place roast beef on top of bread
Spread pesto over roast beef and top with tomatoes
