  • ½ Pound of Rinsed Baby Red Potatoes
  • 2 Cups of Shredded Cheddar Cheese
  • 1 Cup of Sour Cream
  • 2 Sliced Red Chili Peppers
  • 1 Sliced Green Onion
  • ⅓ Cup of Bacon Bits
  • 1 Tablespoon of Olive Oil
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

To begin, preheat your oven to 375 degrees Fahrenheit and place your potatoes on a baking sheet. Drizzle olive oil over them and sprinkle them with salt and pepper before baking them for 20-25 minutes. Take them out and let them cool before continuing.

Once they’ve cooled, slice them in half and scoop the middles out into a bowl, making sure to leave enough around the edges so that the skin doesn’t collapse inwards. Add in 1 cup of cheese, ½ cup of sour cream, salt, and pepper to the bowl and use and electric mixer to mix everything together until it’s creamy.

Scoop this mixture back into the potato bowls you created earlier and top them with the remaining cheddar cheese. Return them to the oven for another 5-10 minutes until the cheese melts. Serve them with a dollop of sour cream, a sprinkling of green onions, and a dash of red chili pepper slices on top.
