  • 1 Bunch of Collard Greens
  • ½ of a Chopped Red Pepper
  • ½ of a Lime
  • ⅓ Cup of Chopped Green Onion
  • 1 Minced Clove of Garlic
  • 2 Tablespoons of Olive Oil
  • 1 Pinch of Red Pepper Flakes
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

Begin by cutting the stems off the greens; cut the stems into thin slices and chop the leaves into smaller pieces. In a large pot of water, wash the leaves and use a strainer to fish them out. Repeat this step with the stems, as well!

While you bring that large pot of (clean) water to boil, prepare a bowl of ice water to cool the greens down. Then, cook the stems for a few minutes before adding in the rest of the greens. Once they become a bright green color, taste one to check its tenderness. Drain the greens and stems out of the hot water, and then transfer them into the cool water.

Once they’ve cooled down, drain them again and let them dry. Then, heat up the olive oil in a skillet over a medium heat and add in the garlic. After a minute or so, add in the green onion, red pepper, and lime juice. Add the collard greens and stems to the skillet, sprinkle with salt, pepper, and red pepper flakes, and enjoy!
