These zucchini egg cups are great for breakfast. They’re a super cute dish to serve on a nice warm cozy morning too!

  • 2 thinly sliced pieces of zucchini
  • 4 eggs
  • ½ tomato, sliced
  • 4 spinach leaves
  • Cheddar cheese, shredded
  • Salt
  • Pepper

Preheat the oven to 400 degrees. Grease 4 cupcake tins with a cooking spray. If you haven’t already, thinly slice 2 pieces of zucchini and cut them in half. Wrap them around the greased cupcake tins. Cut up the tomato into 4 slices. Place 1 into each tin. Top with 1 spinach leaf. Crack an egg into each tin. Sprinkle desired amount of cheddar cheese, salt and pepper. Bake fro 20 minutes. Serve and enjoy!
