Tasty Zucchini Quiche

Ingredients
- one 9-in. deep dish pie shell, baked and cooled
- 2 Tbs. margarine
- 2 cloves garlic, pressed
- 1/4 tsp. salt
- 1/4 tsp. dried dill
- 1/8 tsp. pepper
- 3 med. zucchini, cut into 1/8-in. slices
- 3/4 lb. Monterey Jack cheese, cubed
- 3 eggs, lightly beaten
- 1 C. unsalted cashews
Directions
Preheat oven to 325 degrees. Melt margarine. Add garlic and zucchini. Saute until limp, stirring often. Add seasonings. Line pie shell with cashews. Add zucchini and cheese. Pour eggs over the top. Bake 45 minutes.
