  • 1 package tater tots
  • 1 tablespoon vegetable oil
  • 1 pound lean ground beef
  • 1 diced white onion
  • 2 cloves of garlic, minced
  • 1 package frozen peas and carrots mix
  • 2 sprigs thyme
  • Shepherd’s pie seasoning mix
  • 1 teaspoon Worcestershire sauce
  • 2 cups shredded cheese

Preheat the oven to 425F.
In a large skillet, heat the vegetable oil on high until it starts to shimmer.
Crumble the ground beef and add it to the skillet. Cook it on one side without stirring until it is browned, then stir to cook through any remaining pink spots. Set aside.
Drain almost all the fat from the pan, leaving about 2 tablespoons in the skillet.
Add the garlic, thyme, and white onion. Sautee until the onion turns soft and translucent. Set aside.
Mix the shepherd’s pie seasoning with the amount of water it says on the package. Add the Worcestershire sauce and then cook until it thickens.
Add the meat and onions for about two minutes, stirring until well-combined.
Put the meat mixture at the bottom of a 9x13 pan in an even layer.
Place the vegetables on top of the meat mixture in an even layer.
Take the tater tots and spread it out over the top of the vegetables until the whole pan is covered.
Bake for about 25-30 minutes, or until the tater tots are crispy and browned.
Sprinkle the cheese on top and cook for another 5 minutes, or until the cheese is melted.
Remove from the oven and enjoy!
