Tater Tots & Sour Cream Sausage Gravy

- 1 Bag Tater Tots, prepared according to package
- 1 lb Mild Breakfast Sausage
- 1/3 C All-Purpose Flour
- 3-4 C Whole Milk
- 2 tbs Sour Cream
- ½ tsp Seasoned Salt
- 2 tsp Freshly Ground Black Pepper, or to taste
- 1 C Frozen Peas
Begin this recipe by preparing your tater tots according to package directions.
Heat a large skillet over medium-high heat. Once hot, add the sausage and break it up into pieces using your spatula. Cook until no longer pink and then reduce the heat to medium-low. Begin sprinkling in about half of the flour, stirring until fully incorporated. Continue adding the flour, little by little, until all is used. Let cook for about a minute before stirring in the milk. Stir constantly until fully combined and beginning to thicken.
Once the gravy has thickened, add your peas and sour cream and stir to combine. Sprinkle with salt and pepper and continue cooking until your desired thickness. If your sauce is too thick, add a bit of milk as needed.
