I have been told that this cookie is very similar to the old fashioned tea cakes that our grandmothers used to make.

Ingredients

  • 2 C. self-rising flour or all-purpose flour,
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 C. margarine or butter
  • 1 C. shortening
  • 3/8 C. granulated sugar
  • 1/4 C. brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 Tbs. apple cider or white vinegar
  • ***Note: baking soda must be used whether using self-rising or all- purpose flour

Directions

Combine flour, baking soda and salt. Beat margarine and shortening with electric mixer for 30 seconds. Add sugars and beat until fluffy. Add egg, vanilla, and vinegar; beat well. Add dry ingredients to beaten mixture and mix well by hand. Drop from a tablespoon 3 inches apart onto a greased cookie sheet. Bake in a 375-degree oven for 8-10 minutes. Remove and cool on a wire rack.
