Teacakes
Ingredients
- 2 C. self-rising flour or all-purpose flour,
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 C. margarine or butter
- 1 C. shortening
- 3/8 C. granulated sugar
- 1/4 C. brown sugar
- 2 eggs
- 2 tsp. vanilla
- 2 Tbs. apple cider or white vinegar
- ***Note: baking soda must be used whether using self-rising or all- purpose flour
Directions
Combine flour, baking soda and salt. Beat margarine and shortening with electric mixer for 30 seconds. Add sugars and beat until fluffy. Add egg, vanilla, and vinegar; beat well. Add dry ingredients to beaten mixture and mix well by hand. Drop from a tablespoon 3 inches apart onto a greased cookie sheet. Bake in a 375-degree oven for 8-10 minutes. Remove and cool on a wire rack.
