  • 4 boneless chicken breasts
  • Salt and pepper to taste
  • 2 T. flour
  • 1 C. mushrooms, sliced
  • ½ C. Marsala wine
  • ½ C. chicken broth
  • 2 T. lemon juice

In a bowl, combine salt, pepper, and flour. Dredge chicken in flour to evenly coat and transfer to a greased skillet. Cook over medium-high heat for 5 to 7 minutes on each side until browned. Remove from pan and set aside. In the same skillet, add mushrooms, wine, broth, and lemon juice. Reduce heat to a simmer and cook for about 10 minutes until mixture has reduced slightly. Return chicken to the pan, cover, and cook for a remaining 5 to 10 minutes until chicken is cooked through.
