  • 8 oz. shredded cheddar cheese, divided
  • 4 oz. cream cheese, softened
  • 2 T. heavy cream
  • 1/2 small sweet onion, chopped
  • 1 1/2 C. red bell pepper, chopped
  • salt and pepper to taste
  • 1/4 tsp. garlic powder
  • 1 tsp. fresh dill (optional for garnish)

Preheat your oven to 350°F. In a large pot, steam the cauliflower until tender. In a medium saucepan, whisk together 4-ounces of shredded cheddar, cream cheese, and heavy cream. Slowly stir in onion and sprinkle with garlic powder. Drain liquid from the cauliflower and combine with the cheese mixture. Using a fork or a potato masher, smash until just combined. Fold in red pepper and season with salt and pepper. Transfer the mixture to a casserole dish and sprinkle with remaining cheddar cheese. Cover with foil and bake for 25 minutes. Remove foil and continue baking until cheese begins to brown. Garnish with fresh dill before serving.
