  • 4 lb. pork butt, diced
  • 2 C. applesauce, unsweetened
  • 2 red apples, cored and sliced
  • 1 Tbs. olive oil
  • 2 (14.5 oz.) cans of chicken stock
  • 3 bay leaves
  • Salt and pepper
  • 1 C. white wine, dry
  • 1 large yellow onion, diced
  • 3 cloves of garlic, crushed

In a large dutch oven, heat a tablespoon of the oil and saute the onions for 20 minutes until they’re tender. Add in the garlic and saute for two minutes. Remove this and add the other tablespoon of oil. Brown the pork butt pieces for about 30 minutes. Add the onion and garlic mixture and pour in the wine, scraping up the brown bits. Add one can of the stock, the apple, applesauce, and bay leaves. Bring this to a boil and lower the heat to a simmer. Stir occasionally with the lid slightly askew. After two hours, add the other stock and continue to cook for another 15 minutes, stirring. Serve the stew.
