  • 2 1/2 lb. pork roast
  • 2-4 apples, quartered
  • 2 sweet potatoes, cut into wedges
  • 1 sweet onion, sliced
  • 1/2 tsp. sweet paprika
  • 1/4 tsp. cumin
  • 1/4 tsp. chili powder
  • salt and pepper, to taste
  • oil, enough to coat

Preheat the broiler to 500 degrees.

Rub the pork with oil and season with salt and pepper. Place the roast on a baking tray and broil for 1 minutes. Flip it halfway through the cooking time.

In the meantime, chop the apples, sweet potatoes and onions. Toss the pieces in oil and spices. Arrange them around the pork roast.

Turn down the oven to 450 degrees and roast for 20 to 30 minutes, or until the apples and sweet potatoes are tender and the meat reaches 120 degrees. Let the meat rest for 10 minutes before slicing.
