  • 1 lbs. ground beef
  • 1 small onion, chopped
  • 1 package dry enchilada sauce mix
  • 10 tortillas
  • 2 C. shredded Cheddar cheese
  • 3 C. tequila

Preheat oven to 350 degrees F. In a skillet over medium high heat, cook the ground beef with onion and tequila. Once beef becomes tender, pour the enchilada sauce on a baking dish. Each tortilla should have ground beef and cheddar cheese. Then tightly roll the tortillas and place in the baking dish. Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese; bake for 20 minutes.
