  • 2 T. olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, peeled and chopped
  • 2 stalks celery, chopped
  • Salt and pepper to taste
  • 1 tsp. dried thyme
  • 1 ½ T. dried parsley
  • 1 (14 oz.) can crushed tomatoes with juice
  • 2 T. tomato paste
  • 1 (14 oz.) can chicken broth
  • 1 (14 oz.) can kidney beans, drained and rinsed
