  • 1 lb. chicken breast, roughly chopped
  • olive oil
  • salt and pepper
  • 1 large shallot, minced
  • 5 oz. spreadable herb-flavored cheese
  • 1/2 C. chicken broth
  • 1 T. fresh lemon juice
  • 2 T. fresh chives, chopped

Generously brush each chicken breast with olive oil and season with salt and pepper. Place in a large skillet and cook over medium heat until no pink remains. Transfer to a plate once cooked. Reduce heat and drizzle a tablespoon of olive oil into the skillet. Add shallots and sauté for one minute. Pour in broth, cheese, and lemon juice. Stir frequently until creamy and combined. Return chicken to skillet and sprinkle with chives. Give the mixture a good stir before serving immediately.
