  • 1 lb. baby carrots
  • 1 lb. baby red potatoes, halved
  • 4 lb. corned beef brisket
  • 1 head of cabbage, chopped
  • 1 onion, chopped
  • 6 garlic cloves, crushed
  • 3 C. water
  • 1 T. sugar
  • 2 T. vinegar
  • 8 oz. beer of choice
  • 2 bay leaves, crushed
  • 8 allspice berries
  • ½ tsp. mustard seeds
  • ½ tsp. salt
  • ½ tsp. pepper

Add the chopped onion into the crockpot. Place the corned beef brisket on top of the chopped onions. In a bowl, mix the water, beer, sugar and vinegar. Pour this mixture over the corned beef brisket. Add in the vegetables, except for the potatoes. Add them in after 4 hours have passed. In a bowl, mix the remaining ingredients. Pour mixture into the crockpot. Set crockpot on low and let it cook for 8 hours. Serve and enjoy!
