Tender Flank Steak With Creamy Garlic Mashed Potatoes

- 1 lb. flank steak
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. vegetable oil
- 2 lbs. baking potatoes, peeled and quartered
- 2 Tbs. butter
- 1 C. milk
- 2 Tbs. minced garlic
- ¼ tsp. garlic powder
- 2 tsp. salt, divided
- 1 (8 oz.) packet of brown gravy mix
- 1 green onion, chopped
Preheat oven to 400 degrees. Season steak with salt and pepper. Heat oil in a skillet on high. Sear steak for 2 minutes on each side. Place the skillet in the oven and cook for 5-7 minutes. Let cool and slice into strips.
Boil a pot of salted water. Add potatoes and cook for 15 minutes. In a small sauce pan, combine butter, milk, and minced garlic. Heat over low until butter is completely melted. Use a potato masher or electric beaters to combine milk mixture into potatoes until they are smooth. Season with garlic powder and stir until well blended.
Prepare gravy as instructed on package. Pour on top of potatoes and steak. Garnish with green onion. Serve.
