  • 12 large carrots, peeled and cut in half lengthwise

  • 8 T. butter

  • 1/4 C. maple syrup
2 T. fresh lemon juice
salt and freshly ground black pepper

  • 1 T. fresh thyme leaves

In a large skillet, melt butter over low heat. Add carrots and cover. Stir occasionally and cook for 25 minutes. Increase to medium heat and gently stir in syrup and lemon juice. Cook for two minutes and season with salt, pepper, and thyme. Serve immediately.
