  • 1 T. olive oil
  • 2 onions, chopped
  • 1 (13 oz.) can coconut milk
  • 1 (4 oz.) can Massaman curry paste
  • 3 lb. beef chuck, cubed
  • Salt and pepper to taste
  • 1 C. chicken stock
  • 1 T. fish sauce
  • 1 T. soy sauce
  • 1 T. tamarind paste
  • 2 T. brown sugar
  • 1 lb. potatoes, peeled and chopped

In your pressure cooker, heat oil and sauté onions until translucent; spoon out of pot and set aside. Stir in coconut milk and curry paste. Cook for 7 to 9 minutes until the paste starts to fry. Season beef with salt and pepper and add it into the curry mixture. Add in remaining ingredients, cover, and pressure cook on high for 10 to 15 minutes until everything is tender.
