  • 1 C. sliced mushrooms
  • 2 T. chopped, fresh basil
  • ½ C. chopped red onion
  • 6 eggs

Beat together the six eggs and season with salt and pepper to taste. In a heavy skillet, begin to saute the onion and mushrooms with a bit of olive oil. Once the mushrooms are tender, pour the eggs into the hot pan. Sprinkle the basil on top of the eggs, then allow the eggs to start to set along the edge. Once the edges are starting to set, put the skillet into an oven heated to 400 degrees and bake for 8 minutes.
