  • 1 bunch fresh asparagus spears, trimmed
  • 3 yellow peppers, chopped
  • 3 red peppers, chopped
  • 3 tomatoes, thinly sliced
  • 3 T. extra virgin olive oil
  • 1 1/2 T. parmesan cheese
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/2 tsp.pepper
  • 1 T. lemon juice
  • 2 T. vinegar

Preheat oven to 425 degrees F. Place the asparagus (cut the both ends beforehand) in a bowl, and drizzle with oil, cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet and bake for 10 minutes. Once they are ready, sprinkle with lemon juice, vinegar, and oil. Sprinkle chopped red peppers, yellow peppers, and tomatoes.
