  • 2 T. vegetable oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 T. curry powder
  • 1 tsp. cinnamon
  • Salt and pepper to taste
  • 2 tomatoes, chopped
  • ¾ C. water
  • 1 lb. pumpkin, peeled and chopped
  • 2-4 potatoes, chopped
  • 2 carrots, peeled and chopped

In a large pot, heat oil and sauté onion and garlic until softened. Season with curry powder, cinnamon, salt, and pepper. Add in tomatoes and cook until breaks down and sauce begins to thicken. Pour in water and stir well. Add in pumpkin, potatoes, and carrots; bring mixture to a boil. Reduce heat and simmer, stirring occasionally, for 20 to 30 minutes until vegetables are tender.
